A modern French eaterie, étain is Conran's first UK destination restaurant outside London. Pure Conran, the design combines natural oak, earthy colours and luxurious leathers to create a stylish, elegant space that manages to be simultaneously glamorous and welcoming. The one kitchen team lead by Geoffrey Smeddle – a bit of celebrity chef in Scotland – also serves Zinc Bar and Grill next door. In etain he uses top quality regional Scottish ingredients to create fine traditional French dishes such as fresh pea soup with morels and chervil; Culatello ham, Cantaloupe melon and aged balsamic vinegar; and roast pigeon with Puy lentils, slow roasted garlic and glazed shallots. Feeling indulgent? Try the Epicurean Menu, £37, for lunch or dinner. C'est tres bon.
