Situated about five miles north of Yeovil, Ilchester lies at the junction where the A37 meets the A303. It is on the River Yeo and, up until the 19th century, was the county town of Somerset. The area seems to have had a Roman military fortification and flourishing town around the third and fourth centuries but a lack of fifth century Archaeological finds suggest that this went into a period of decline at around this time. However, there is also scant Archaeological evidence for the later Saxon settlements, for which a great deal of documentary evidence does survive. It is famous today for the Ilchester Cheese Company, who do not manufacture cheeses, but make speciality cheese by blending other English cheeses with spices and diverse ingredients such as Beer. Started in 1962, the company is now one of the UK's largest exporters of speciality cheese. Ilchester is mentioned in the famous Monty Python 'Cheese Shop' sketch as being the favourite cheese in the manor in which the shop resides. The shop, of course, stocks no Ilchester cheese! The importance of the town in the past was partially due to the location of the county jail, Ilchester Prison. This has since been relocated to Taunton.
